I can’t pinpoint the exact moment I fell in love with it, but I’m pretty sure it started in some restaurant, and that love has only grown over the years. This version is my personal take, inspired by the way my mom used to make it, but with a few touches of my own. This recipe is all about letting simple ingredients shine. With just a bit of prep and a flavorful overnight marinade, you'll end up with tender, juicy beef and sweet peas that practically melt in your mouth. The process is straightforward, and most of the work happens while it bakes, making this an easy yet impressive meal.
Slice the beef: Cut the beef into strips about 1 cm thick, making sure to slice against the grain. This helps keep the meat tender after cooking.
Tenderize the meat: Use a mallet to gently pound the beef slices. If you don’t have one, a clean hammer or any heavy, blunt object will do the trick.
Make the marinade: In a bowl, mix together all the ingredients for the marinade until well combined.
Marinate the beef: Pour the marinade over the beef slices and coat them well. Let it sit out for an hour or two, then transfer it to the fridge to marinate overnight.
Bring to room temperature: When ready to cook, take the beef out of the fridge and let it sit at room temperature for about an hour.
Add the peas: Stir the peas into the marinade along with the beef and give it a gentle mix.
Arrange in the pan: Lay the beef slices flat in a large baking pan. It’s fine if they’re snugly arranged as they will shrink as they cook, just make sure they’re not overlapping.
Add marinade and peas: Pour the remaining marinade and peas over the arranged beef, spreading them out evenly.
Drizzle with oil: Drizzle a little olive oil over the top for a richer flavor and golden finish.
Bake first side: Bake in a preheated oven at 375°F (gas mark 5) for 15–20 minutes, or until the tops of the steaks are nicely browned. You can bake it a few minutes more or less based on how you like your beef cooked.
Flip and bake again: Carefully flip each slice and return the pan to the oven for another 15–20 minutes, until the second side is browned as well. Adjust the baking time to suit your preferred level of doneness.
Check for doneness: Prick a piece with a fork to check if the meat is cooked to your liking. Add a few more minutes in the oven if needed—I personally go for well done, but I'm starting to also like it medium lately!
Garnish and serve: Once out of the oven, transfer the beef and peas to a serving dish and sprinkle generously with freshly chopped coriander leaves.
