What’s Christmas without a fruit cake? In our family, it simply wouldn’t feel complete without my mom’s famous Christmas Fruit Cake (referred to as “Plum Cake” by friends and family). The tradition of baking this cake is part baking marathon, part family bonding, and part test of patience! Last Christmas (2019), curiosity (and a bit of bravery) got the better of me, and I decided to finally learn the art of this fruit cake. My mom always said it was all about timing and measurements — no shortcuts allowed if you wanted that rich, aromatic cake to turn out just right.

 

Of course, in true festive spirit, my mom ended up doing about 75% of the work while I stood by with wide eyes, sneaking tastes here and there. By the end of it, I was both exhausted and amazed, and I may or may not have sworn to someday find a simpler recipe that gave the same delicious results 😉. This cake is a little labor of love, but the payoff is unbeatable: a beautifully spiced, dark, and fruity centerpiece that fills the whole house with Christmas cheer.

    Directions

    Now that you have your ingredients ready, it’s time to build the cake step by step, from soaking the fruits to folding in spices and finally baking it to perfection. Each stage adds its own depth of flavor, coming together in the rich, festive taste of Christmas.

    Step1

    Soak the Dry Fruits: In a mixing bowl, combine the rum, orange juice, lime juice, and the brown sugar (Regular sugar can also be used, but note that dark brown sugar adds a great flavor). Finely chop the assorted raisins and stir them into the mixture. Let the fruits soak for at least 3–4 hours to absorb all the rich flavors. I like them to soak them for about a week, so after the 3-4 hours I usually pop them into the fridge.

    Steam the Fruit Mixture: Once soaked, steam the fruit mixture over boiling water. Keep stirring continuously and make sure not to cover the bowl. This softens the fruits and enhances their flavor.

    Make the Blackjack Caramel: In a non-stick saucepan, heat the sugar over medium heat until it begins to darken and caramelize. Lower the heat and carefully add water. Stir until the sugar completely dissolves and the syrup turns black. Set aside to cool.

    Whisk the Eggs: In a mixing bowl, beat the eggs with 4 tablespoons of caster sugar until the mixture turns light and fluffy, with stiff peaks forming. This will give the cake its airy lift.

    Cream the Butter and Sugar: In a separate bowl, blend together the butter and ghee until smooth. Add the powdered sugar and mix well until light and creamy.

    Step6

    Combine the Mixtures: Gently fold the beaten eggs into the creamed butter mixture. Then add the prepared dry fruit mixture, ensuring there are no lumps. Stir until everything is evenly combined.

    Add Flavors and Nuts: Mix in the cooled blackjack caramel, along with the jam, marmalade, and finely chopped cashews. Stir well till everything's combined.

    Fold in the Dry Ingredients: Sift together the flour, baking powder, and mixed spices. Gradually fold them into the batter, taking care not to over-mix. Set the batter aside for 2 hours to rest and develop flavor.

    Bake the Cake: Preheat the oven to 350°F (180°C). Bake the cake at 350°F for 10 minutes, then reduce the temperature to 300°F (150°C) and continue baking for 1 hour. The cake is ready when a toothpick inserted into the center comes out clean.

    Cool and Serve: Allow the cake to cool completely before slicing. For the best flavor, soak in more rum and let it rest a day or two before slicing and serving.
