Living in Nagercoil, it’s almost impossible to escape the constant supply of bananas, and sometimes, two or three whole bunches ripen all at once and suddenly you’re scrambling to use them up before they go to waste. Whenever that happens, my go-to solution is simple: get baking!
This banana bread is one of my favorite ways to turn surplus bananas into a comforting, delicious snack. It’s a recipe I first learned from my mom, and over time I’ve added my own twist — sometimes I toss in chopped dates for a sweet bite that pairs perfectly with a cup of evening tea. This banana bread is delightfully simple to make: just a few bowls, a handful of ingredients, and you’re all set to transform those ripe bananas into a delicious homemade loaf. Follow these steps and you’ll have a comforting bake ready in no time.
Mix the dry ingredients: In a large mixing bowl, combine the flours, sugars, baking power, baking soda, cinnamon powder and salt, and mix well to ensure they’re evenly distributed.
Combine the wet ingredients: In a separate bowl, whisk together all the wet ingredients until smooth and well blended.
Bring it all together: Pour the wet mixture into the dry ingredients and mix gently until everything is just combined. Don’t overmix.
Bake the banana bread: Transfer the batter into a 10-inch baking tray and bake in a preheated oven at 360°F (Gas Mark 4) for 30–40 minutes, or until a wooden pick inserted into the center comes out clean.
