Now that you’ve got the idea, let’s move step by step through the process. The method is simple: bake your base cake, prepare the jelly, and let the two come together into a chilled, colorful dessert that’s as fun to make as it is to serve.
Bake the Base Cake: Prepare the butter cake following the instructions in my basic butter cake recipe. Once baked, loosen the cake gently from the sides of the pan, but do not remove it. Allow it to cool completely in the pan, as this will help the jelly set neatly later on.
Prepare the Jello: Make the jello according to the instructions on the packet. Set it aside for a few minutes to cool slightly, keeping an eye on it so it doesn’t set too quickly.
Poke the Cake: Using skewers or straws, poke holes evenly across the cake. If you’re using skewers, gently swivel them as you push down to widen the holes. This allows the jelly to seep in better.
Soak with Sugar Syrup: In a small saucepan, dissolve ¼ cup sugar in ½ cup water to make a light syrup. Brush or spoon the syrup generously over the cake until it’s evenly soaked. This keeps the cake extra moist and enhances its sweetness.
Add the Jello Layer: When the jello mixture just begins to thicken but is still pourable, carefully pour it over the cake. Ensure the surface is fully covered with at least a 1 cm thick layer of jelly (Note that pouring the jello over the cake before this stage will cause the cake to completely soak it up and we don't want that).
Chill and Set: Place the pan in the refrigerator and allow the jelly to set completely.
